The University Meat team have worked with meat for a really long time; and proudly so. Since 1960, and working with the best suppliers, University Meat has provided quality products to some of the city’s top hotels, restaurants and caterers.  Based in Carlton, our team holds passion, growth and predictability as values at our core, which our entire team live by and on-deliver to our customers. With the highest level of service, quality and consistency our top priority, our team are equipped with the skills and knowledge of both the hospitality and meat industries and are dedicated to helping our customers improve their meat offer; in turn increasing sales through venue specific marketing and training.

Our Story

1956 : Eusebio migrated to Australia (from Abruzzo, Italy) at the age of 13 years old, with his 3 older brothers – leaving his other siblings and parents back in war-torn Italy

1966 : After many years of trying to complete his schooling - Eusebio was mentored into butchery as a craft and during the next decade he and some business partners set up more than 49 retail butcher shops across Victoria

1979 : Eusebio consolidated all his operations into our Carlton Facility and University Meat was born

Today : Our business focus is our customer satisfaction and providing value to our key accounts who are some of Australia’s leading hotels, restaurants, caterers, stadiums and institutions

Environmental Sustainability

The University Meat team have a commitment to the long-term care of the land and environment from which our members and our industry derive our existence, raw material and viability - with a focus on "nose to tail".

Quality Assurance

University Meat has a team of Qualified Quality Assurance personnel. Our focus is on alignment of our supply chain and process together with customer/product specification. We have the ability to trace products back via our supply chain via batch numbers and/or use by dates.

We operate under a HACCP based Quality Assurance System that is accredited by the Prime Safe. The QA system meets all objectives of applicable regulations, acts and codes of practice. This same QA system is independently audited by SGS International Certification Services Pty. Ltd.
