How to make chicken Parmigiana

 Parmigiana originated from Italy and is still a dish served today with eggplant rather than chicken. When the Italians migrated to America the dish became a fusion of both countries.  The eggplant was substituted to chicken representing the hearty comfort food of America served on a bowl of pasta. Our chicken schnitzel comes already crumbed, cutting the preparation time for chicken parmigiana in half. For an easy and quick recipe purchase our chicken schnitzel on special this week. Skip the crumbing step and head straight to cooking a golden-brown chicken schnitzel. Place a slice of ham on the chicken pour the tomato passata over the top. Add the cheese on top and grill until melted and golden brown.   

When cooking at home fresh Ingredients are always best when creating.  Our chicken schnitzel is fresh, natural and hormone-free chicken. Our chicken schnitzel is made with chicken breast, we pound the chicken with a meat tenderiser to make it a thin piece of meat.  The chicken is then crumbed with a mixture of bread crumbs and water.  

  

What to serve with Chicken Parmigiana

All over the world people have different ways of serving the chicken parmigiana. In Australia, we have adapted the chicken parmigiana as a classic pub meal. We recommend serving on or with a side of hot chips.  

 


 

 

 Ingredients

  •  4 tablespoons oil
  • 1 brown onion, finely chopped 
  • 1 garlic clove, crushed
  • 800g bottle tomato passata
  • 2 tablespoons chopped fresh basil, plus extra to serve
  • 1/2 x 250g ball buffalo-style mozzarella, sliced
  • 1/3 cup finely grated parmesan
  • Salad leaves, to serve
  • Slice of ham

Method

 Cooking the chicken schnitzel

  • Heat 2 tablespoons of oil in a large frying pan over medium-high heat. Cook chicken schnitzel for 4 to 5 minutes each side until golden. Remove from pan.

 Passata mixture

  • Heat remaining oil and add onion, stirring until softened. Add garlic and cook for 1 minute. Stir in tomato passata and basil. Simmer for until slightly thickened.

Grill

  • Preheat grill on medium-high. Place cooked chicken schnitzel in an ovenproof tray. If you like add a slice of ham. Place passata mixture on top of the chicken schnitzel. Top chicken with mozzarella and parmesan. Grill for 4 to 5 minutes or until cheese is melted and golden.
